I don’t know what got into me, but after I left the gym, I immediately jumped on the Downtown 6 to pick up groceries for dinner at Whole Foods.  I was dying without Aged Balsamic Vinegar in the kitchen, so I figured I would go all out for myself tonight.  On a regular basis, I never do this because I can’t justify the mess for one person.  But tonight, I’m worth it!

First course: Small Caprese Salad

  • 1/2 tomato
  • Extra Virgin Olive Oil or Grape seed Oil (my preference)
  • Aged Balsamic Vinegar (don’t get the cheap stuff)
  • Fresh Basil (which can be optional, but not the same without it)
  • Optional: Mozzarella cheese
