SINGLE GAL RECIPE #201: TURKEY VEGGIE BURRITO
Warning: Advanced recipe. I use two pans instead of my usual one.
In one skillet, sautee your favorite chopped veggies (onion, peppers, broccoli, mushrooms, asparagus) in EVOO or grape seed oil and season with garlic powder, salt, pepper. In a separate pan, cook ground turkey and finely chopped onions with the same seasonings and chili powder. Heat a whole wheat tortilla in microwave. Squash avocado onto tortilla, add a little lettuce, fresh salsa, veggies, turkey. Wrap it up and enjoy!
One should be enough to satisfy you, but I always pick at the leftover veggies in the pan afterwards :)
To pair with this feast, I like a lovely white wine. Your choice of grape, as long as it’s white.
