DINNER TONIGHT – LEFTOVER SOUP
I know, It looks pretty sad (the dish and the pic). I wish I had Sarah’s motivation to prepare something tasty, but you know my one pot rule. Honestly though, my DIY soup hit the spot. ::
There’s always veggie broth in my kitchen. (My stepmom taught me how to make “Leftover soup” that always comes out amazing.) So tonight I heated up a leftover portobello from Central Market, baby spinach, and tomato slices in saucepan and dumped it into the broth. Voila. Fresh vegetable soup. A round of applause please. Haha. Dessert of course was a vegan cookie.
