DINNER TONIGHT – TACKLING BUTTERNUT SQUASH
Tonight I decided it was time to tackle my fear of the big, bad butternut squash. Woohoo. Want to know where I got the confidence….so pathetic…There was a sticker on the squash that explains how to prepare it. :: I read the sticker in the store, thought “that’s really easy,” and tonight I gave it a go. I was sold at word one. Here’s what the sticker says:
Microwave (hell yes): Cut squash in half lengthwise, remove seeds, place squash cut side down in 1/2” water in dish covered with plastic wrap. Cook 6-10 min until the skin is soft, uncover, turn over, cook 4-6 minutes. Let stand 5 min. Add butter, honey, or brown sugar or syrup, salt and pepper. Bake in shallow pan for 30-45 min at 400, cut side down till tender. Turn and bake til toasty brown.
Yep, all of that on a sticker. I followed the instructions and it turned out great. Surprisingly I didn’t need to add anything to the squash, it was delicious all on its own.
I paired it with pieces of rotisserie chicken I sauteed with onions and put it over a bed of baby spinach with oil and balsamic vinegar.
Top it off with a glass of wine. Dinner is served.
