DINNER TONIGHT –
LEFTOVERS GROCERIES AGAIN
I know my dinners must seem ridiculously boring these days, but I want to use all of the groceries before they go bad.
But I did change it up tonight…a little. I sauteed mushrooms in white wine, onions and the rest of a rotisserie chicken with a little white wine, and the outside of a tomato and spinach with garlic, salt and pepper (all three separately). Topped it off with a drizzle of balsamic vinegar.
The soup is butternut squash with garnishes inspired by the recipes you sent. In a blender I liquefied the butternut squash I steamed in the microwave (two nights ago) with vegetable broth and then heated it in a saucepan. The garnish is carmelized onions and green apples. Not fantastic, but not bad. You see, I didn’t have all of the ingredients your recipes called for, so I improvised.
Damn my pictures are pretty bad though. Sarah, help a girl out. This dish might look appetizing if I had one of your professional pics.
