DELICIOUS DISH – FLAVORFUL STEAMED ARTICHOKES
Yep, it’s another one pot wonder that impressed our guests! This was my first attempt at steamed artichokes, so I had to look up exactly how to do it. Ok, I knew how to do it, I just needed confirmation I was right and wasn’t going to completely F it up.
- Three artichokes
- Extra Virgin Olive Oil
- Fresh Pesto
- Chopped Garlic
- Salt and Pepper
In a steamer, boil water and garlic. When boiling, lower heat and add artichokes. Cover for at least 30 minutes. When you can pull out a leaf with ease, they’re done.
To prepare the artichoke: Wash artichokes and cut off the top and stem. In a bowl mix EVOO, a lot of pesto, some rosemary, salt, and pepper. I didn’t measure and it turned out ok. If I didn’t mess it up, you won’t either. Go with your gut. Pour the mixture into the chokes. Place in steamer and wait.
Before you serve, cut up a stick of butter in a microwave safe bowl. Add some garlic and pesto. Melt in microwave and serve in a pretty bowl.
Healthy and yummy. Just make sure to serve with a lot of napkins :)
