Delicious Dish – Mexican Meal

If you’re looking to make something other than burgers and dogs at your holiday BBQ, go for a Mexican themed meal.  Use this easy marinade on beef or chicken, whip up some fresh guac and pico de gallo and you’re all set!

Fajita Marinade

  • ½ cup olive oil                                                    
  • ¼ cup vinegar
  • 1/3 cup lime juice                                                 
  • ½ chopped onion
  • 1 tsp sugar                                                           
  • 1 tsp oregano
  • ½ tsp salt                                                            
  • 1/2 tsp pepper
  • ¼ tsp cumin                                                        
  • ½ tbsp paprika
  • 3 cloves garlic, minced                                         
  • 1 large onion, sliced.
  • 2 lbs skirt steak, chicken, pork tenderloin
  • beer
  • large plastic Ziploc bags

-Mix all ingredients together.

-Add beer to taste, you don’t need the whole can, just to dilute and increase amount of marinade.

-Put meat in Ziploc bags and add marinade.

-Put in refrigerator overnight.

-Cook on highest heat in pan, or even better on the grill.

Guacamole (yes, it’s this easy)

Avocadoes, Diced tomatoes, finely diced onions, salt, pepper, garlic powder, a little lime.

– Cut avocadoes in half, remove pit.  While still in the skin, cut up and down across the top.  Scoop from the skin with a spook and into a bowl.

– Add tomaotes and onions.

– Season to taste.

You’ll also need tortillas, chips, and beer (obviously).  I really like shredded lettuce and grilled veggies with my fajitas too!
