Lazy Ass Lunches

I went to the grocery store on Monday to get fresh produce, but somehow forgot to get everything that goes with it (bread, meat, etc).  Instead of going back, I have just been throwing together what I have….so pathetic.

DAY 1:  Tuesday, Open-Faced Veggie Sandwich? (picture above with my Kodak Z980)

  • Broccoli, sauteed
  • Onions, sauteed
  • Baby spinach
  • Last piece of wheat bread, toasted
  • Last wedge of avocado spread on toast
  • Aged balsamic vinegar (which saved the dish)

Let’s call it an open-faced veggie sandwich :)

I had marinara and wheat pasta at my disposal, but decided that was more effort than I was willing to put forth at that moment.

DAY 2: Wednesday, “Spinach pasta” 

  • Baby spinach
  • Broccoli, sauteed
  • Over-ripe tomatoes, sauteed
  • Onions, sauteed
  • Spicy marinara
  • Whole grain tortilla chips

Yep, you guessed it.  Too lazy to make the pasta again so I sauteed all of the veggies (in one pan obviously), poured in the marinara and then dumped the whole skillet on top of lettuce.  Ummm….it’s as pathetic as it sounds so I didn’t bother to take a picture.  It gets worse. Missing some sort of real substance, I grabbed the tortilla chips and started using the salad as a chunky dip.  

DAY 3: Starving

I’m leaving the house to find a sandwich.
