Nothing special, just a simple way to spice up your spinach.
- 1/4 cup raisins
- 1/4 cup pine nuts
- 2 Tbsp EVOO
- 1 yellow onion
- 1 clove garlic, chopped
- 2 lbs baby spinach leaves
- Salt and fresh black pepper
Put raisins in a heat proof bowl and cover with boiling water until they are plump. About 10 minutes. Drain and put aside.
Toast pinenuts in a pan over medium high heat. Be careful not to overcook. About 2-4 minutes
In a frying pan sauteed onion until golden (5-8 min). Add garlic and saute for another minute. Remove from heat and set aside
Wash spinach and put in a sauce pan with only water that’s still on it. Cover and cook until spinach is wilted (1-2 min). Drain and press spinach with a fork to get out all of the water.
Combine onions, raisins, spinach, to a frying pan over medium heat. Stir until heated through Season adn serve hot or at room temp.
