Delicious Dish: Breakfast Bruschetta (from the InterContinental Cozumel)

Take the extra two seconds to make this open-faced egg sandwich for brunch at home instead of your usual. I had it twice in 4 days because it was so good.

Here’s how you put it together from the bottom up:

— Toasted ciabatta bread

— Barely sauteed spinach in olive oil.

— Crispy pancetta (Not traditional bacon!)

— Scrambled egg whites

— Fresh Parmigian cheese

— Aged balsamic vinegar (or a reduction) drizzles on top

— Roasted tomatoes on the side

— No salt or pepper at all. Nor did I add it. The pancetta and cheese were so flavorful!

I was actually pleasantly surprised to find and enjoy such an intricate Italian menu at the resort.
