I probably shouldn’t refer you to this recipe a week after posting the NYTimes article “Is Sugar Toxic,” but the more I think about it, the more I realize that’s the point. We know the things that are bad for us, but we love them so much, we’ve decided life isn’t worth living without them. And in comparison to all of the evil substances out there, isn’t sugar one of our lesser adversaries??
Or is that just me and I’m speaking out of turn for everyone here….Sorry!
Anyway, this cake sounds amazing. You can find the sugar warning label here. All I can hope is that if the cake is as good as everyone claims it to be you won’t eat the whole pan.
- 8” round cake pan with sides at least 2” high. If your pan isn’t 2” deep, choose a 9” round pan.
- 1 1/2 cups (6 1/4 ounces) King Arthur Unbleached All-Purpose Flour
- 1 cup sugar
- 1/4 cup cocoa
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon espresso powder
- 1 teaspoon vanilla
- 1 tablespoon vinegar
- 1/3 cup vegetable oil
- 1 cup cold water
