Breakfast For Dinner: Healthy Edition

For years, I have been swearing to make these Herbal Baked Eggs I featured in TMIweekly.  Finally, tonight, I followed through with it, and went all out no less.

With the exception of the bacon, the above dinner is well-balanced, health-conscious, and delicious.

  • Herbal Baked Eggs (how-to video below)
  • Sauteed broccoli with crispy bacon crumbles
  • Lean bacon
  • Quinoa with cinnamon, raisins, and walnuts (with a little agave)

Enjoy all of these separately or together. The broccoli and quinoa are pretty self explanatory.  Here’s what you need for the eggs:

  • Herbs (rosemary, thyme, parsley, chives)
  • Garlic
  • Parmesan cheese
  • Cream
  • Butter
  • Eggs
  • Salt and pepper
  • Ramekin

Watch the video to see how to make it!  It’s super simple. You probably don’t need as much butter and cream as she suggests. I used 1 whole egg and two eggs whites per serving.

    I’ve been reading Real Food by Nina Planck…a great read. She explains why the bacon is healthy too!! We need all types of (natural) fats, even saturated! Your whole meal is making me hungry by the way!

    • Totally agree Leah. However I prefer to get my “good” fat from olive oil, avocados, nuts, and fish. Even prosciutto, which is leaner.
