2 quick baking tips for flour

While making the snickerdoodles I realized a couple useful techniques I’ve learned over the years you might find helpful.

1. MEASURING

To measure in a marked measuring cup, make sure you tap cup against a counter to level it out and then set it down.  Then lower your eyes so they are level with the cup so you can ensure you have the right amount of flour.

2. SIFTING

If you don’t have a sifter (for the life of me I couldn’t find mine), you can use a mesh strainer.  Hit your hand against the rim to get the flour to fall or simply move the strainer back and forth quickly.

The flour won’t be as fine, but the dry ingredients will mix and it’s a much quicker process than a sifter.
