My friend Andrea whipped this up for lunch the other day. So good! Here’s her recipe she sent me via email:
Green lentils de Puy
Cook these in water, salt and a couple bay leaves (bring to boil and simmer)
Drain lentils and add chopped carrot (1 or two small), 1 chopped celery stalk and chopped parsley.
red wine vinegar (lots)
Mix it all together and adjust seasonings (more salt, vinegar etc.)
Sorry I really don’t measure either of these. Next time I should so I can publish the recipe :)
